 Cavallucci di Siena - A fountain of sugar, white flour, tiny pieces of candied orange peel, little cubes of lime. Walnuts and coriander and intoxicating aniseed. The nickname of Cavallucci - Little Horses - came from the custom, now abandoned, of stamping the image of a horse on the raw pastry. But there is more than one version of the story and some recount that, peppered and savoury as they are, these sweets were sold in country inns to tickle the palate and encourage customers to drink. They called them "Horsemen's sweets" then.
